If 2025 was all about protein, 2026 has brought the conversation back to the gut. Fibermaxxing is everywhere, fermented foods have moved well beyond the wellness niche, and even the way we think about protein is becoming more nuanced: not simply more, but better quality, enough overall, and spread more thoughtfully throughout the day — particularly as our needs change with age.
Running quietly all of these trends is something much simpler: a return to real food. More vegetables, legumes, whole grains, fermented foods and satisfying sources of protein; fewer ultra-processed products pretending to do it all.
So rather than treating every new nutrition trend as another rule to follow, we wanted to make them useful. This guide translates the ideas we’ve been talking about into seven days of nourishing, realistic meals 🪽

The principles
Anchor every meal with protein. Roughly 1.2–1.6g per kilo a day, spread evenly starting at breakfast.
Build fiber toward 25–35g a day. Whole grains, legumes, vegetables, fruit, nuts, seeds. Add it slowly, drink more water.
Aim for ~30 different plants a week. Herbs and spices count. Variety beats any single "superfood."
Eat something fermented most days. Kefir, plain yogurt, kimchi, sauerkraut, miso, kombucha.
Mind the order at big meals. Vegetables and protein first, carbs last same food, gentler blood-sugar curve.
Keep it whole. Cook from real ingredients. Treats stay, they just come from a kitchen more often than a wrapper.

Gut breakfast: kefir smoothie (kefir 250ml, berries 80g, spinach 30g, flax 10g) + 2 eggs 100g
Lunch: miso salmon or tofu 160g, rice 90g, cabbage slaw 120g
Dinner: grain 90g bowl with greens 100g, chicken or tempeh 150g, sauerkraut 40g
Thursday
Plant variety breakfast: omelette (3 eggs 150g) + vegetables 100g + sourdough 60g
Lunch: rainbow salad 250g with chickpeas 120g and seeds 15g
Dinner: stir-fry with tofu or chicken 160g and vegetables 300g. Tick off 12–15 plants today.

Friday

Blood-sugar savvy breakfast: 2 eggs 100g, avocado 50g, greens 50g, sourdough 60g
Lunch: salad 150g first, then protein 150g, then grains 90g
Dinner: protein 160g and vegetables 200g first, then pasta 180g; kombucha 250ml
Saturday

Whole-food comfort breakfast: shakshuka (2 eggs 100g, tomato base 200g) + sourdough 60g
Lunch: homemade soup 350ml and an open sandwich (bread 40g + toppings 80g)
Dinner: roast chicken 180g, potatoes 200g, roasted vegetables 200g
Sunday

Breakfast: chia pudding (chia 30g + kefir 200ml) + berries 80g
Lunch: salmon or sardines 120g, leafy greens 100g, olive oil 10g
Dinner: grain 90g, roasted vegetables 200g, protein 150g, fermented side 40g
Then cook a grain, roast some veg, boil eggs for the week ahead.
You need a plate with a clear protein anchor, more fiber than last year, something fermented most days, and a wide rotation of plants mostly cooked from real ingredients.
